Stuffed Dates with Chestnut Cream

Well hello there! It’s been a while. I caught my breath from the holidays, and behold yet another one is upon us: Thanksgiving.

Giving thanks – it’s something we speak about a lot I think, but not something we put into practice that much. I’ve been working on it a lot lately actually – really getting in the moment with my children, being thankful for the craziness and the messes instead of feeling overwhelmed by them.

It happened gradually really, after making a commitment to feeling more gratitude, I noticed how I started to see the good in things more naturally. My kids became cuter, the mess less overwhelming, and I became more productive because life just felt easier. It’s as simple as that.


Or maybe not quite so simple because life gets hectic, and hard, and sometimes it’s just hard to see the good in things – but it’s almost like a muscle, exercising that part of the brain makes it come more naturally. At least that’s been my experience.


So yes, this Thanksgiving I am actually practicing gratitude and I really have so much to be thankful for! When I picked up my camera to do this shoot, it felt so good to be behind the camera and I took the moment to really appreciate having a job that I absolutely LOVE, one that allows me to express myself creatively, and do the things I love.


While I don’t host a Thanksgiving dinner, I’ve been celebrating at my friend Melinda’s house for the past few years and I always bring a dish with me. This year, I really wasn’t feeling pie, even though that’s what I usually bring.

In the past, I’ve brought Mexican hot chocolate pecan pie, cookie butter pumpkin pie, and baklava pumpkin pie. One year I brought the chicken liver hummus from my cookbook, Millennial Kosher, because Mel is a big liver fan! But this year I wanted something easy yet festive and I knew I wanted to do something with chestnuts.

I’ve been dreaming of making my own chestnut cream every since I had chestnut crepes in Paris a few months ago, so I started there. A cake seemed too overwhelming, so what else to do with it? Well…. I love stuffing dates with all sorts of nut butter and tahini, so why not chestnut puree right? Especially when I cook it down with orange, cinnamon and cardamom – the perfect pairing!

Baklava Pumpkin Pie

Oh. Em. Gee. It’s been forever!!!! I can’t remember the last time I took such a long blogging break – I have missed you all!

Of course I haven’t disappeared entirely. If you follow me on Instagram, you’ve seen me traveling around the country on my book tour, and it’s been quite a journey. I’ve been fortunate enough to meet so many of you in person, to share my love of food, family and tradition to a range of audiences, and to be going into the third printing of Millennial Kosher with almost 20,000 copies sold! Pinch me!!

Thanksgiving is all about showing thanks and boy am I grateful. Grateful for this platform. Grateful to see my dreams come true and grateful that somethow, someway, in between all this running around, I still love what I do SO. VERY. MUCH.

Truth be told I hit a bit of a creative slump but I am back and I couldn’t be more excited about it!! This baklava pumpkin pie came to me along with a bunch of other exciting ideas that I can’t wait to share, and I am so glad I was able to get into the kitchen and behind the camera to share it with you all. I thought it might be too complicated to execute but I got so much amazing feedback on it and I’m so pleasantly surprised that y’all are ready to tackle layers and layers of buttered fillo dough – not the easiest feat!

I actually tested this recipe with melted coconut oil and I was so happy to see that I could avoid the dreaded margarine route while still keeping it pareve. Just make sure to go for refined coconut oil otherwise you’ll be left with baklava COCONUT pumpkin pie and no one wants that, amiright?!

The diagonal slits are probably the hardest part about this – and I watched a whole lot of YouTube videos until I figured it out – but you can feel free to make this a la the traditional route in a rectangular dish and forgo the difficulty.

Mexican Hot Chocolate Pecan Pie

It’s amazing how I’m becoming less and less into sweets. I mean, don’t get me wrong, I love a good dessert. But sometimes I find the sugar so overly cloying. Like in pecan pie.

But with pecan pie being so traditional and all, I didn’t want to just cut it out of my life without at least trying. So try I did. And succeed, oh yes, I did!

Enter Mexican Hot Chocolate – the sweet and spicy rich chocolate drink with just the right amount of kick. I love how the bittersweet chocolate and chili balances out the sweetness in this pie. It totally works.

I’ve done this before with brownies, and it has become one of my most favorite recipes. My guests always ooh and ahh over my Duncan Hines fix, thinking I spent hours perfecting the best brownie recipe.

With pecan pie, it’s just the same. The filling is really fairly simple, and if you use a frozen pie crust like I did (insert-surprised-emoji-face-here), it’s as easy as 1-2-3.

This beauty is being gifted to Melinda of kitchen-tested for her pie bar tomorrow, which I will be lucky enough to be sampling from, after her crazy Thanksgiving feast! Sorry that I had to slice it open Mel!
