Summer Rolls with Spicy Dipping Sauce

I couldn’t imagine  going through summer without posting the ultimate light and healthy dish – summer rolls. To be honest, I have no idea why they are called “summer” rolls. I think it’s because they are lighter than their wonton cousins, but I could be wrong.

Unlike classic eggrolls, which are usually fried and heavy, summer rolls are made with rice paper rounds and don’t require any cooking. If you’ve never worked with rice paper before. don’t be intimidated, it’s really super easy.

The great thing about summer rolls is that they can be filled with anything – fruit, veggies, or your protein of choice. Fish and tofu work wonderfully in these rice paper roll-ups, but grilled chicken and veggies are my faves. I once watched Giada de Laurentiis make a fruity version on the Food Network. She filled the rounds with pad Thai noodles, strawberries, mango and almonds and prepared a honey-mint dipping sauce to go on the side. She served them after a yoga lesson as the perfect post-workout treat.

For me, making a dish like this doesn’t really require a recipe. I look into my fridge and put together whatever scraps I can find. In this case, I had leftover marinated chicken breasts, so I threw them on my grill pan for a quick sear. I found some nappa cabbage, shredded carrots, scallions and edamame, and put them all together for a fabulous combo. Feel free to do the same (grab whatever you can find in your fridge) or follow my recipe below.

Oh, and the dipping sauce? Let me just say this — it’s awesome.

Savory {& Sweet} Cheese Balls


I was first introduced to the idea of cheese balls from Nechama Cohen’s cookbook, Enlitened Kosher Cooking. She makes a version using farmer cheese and 5% cheese for a lighter variation than the classic cream cheese. I made this for shavuous in the past, and as delicious as it is, it is even prettier to look at. If you are looking for that wow factor at your yontif table, you should definitely consider making these.

There are hundreds of cheese ball recipes out there, and the truth is, you don’t really need a recipe at all. All you have to do is start with the main ingredient: creamy cheese. Then, mix in whatever filling you’d like. I had some leftover sundried tomato olive tapenade, so I mixed a few tablespoons of that in. Think of the kind of cream cheese they have at bagel shops or get creative with original concoctions.

Here are some suggestions:

SAVORY CHEESE BALLS:

Cheese:
cream cheese
goat cheese
farmer cheese
blue cheese
Roquefort cheese

Fillings:
cheddar cheese
scallions/chives
olives
sundried tomatoes
jalapeno
pimientos
chillies
craisins

Condiment/Spices:
soy sauce
worcestershire sauce
horseradish
wasabi
ginger
basil
mustard
lemon
rosemary
thyme
hot sauce
packets of mixed herb seasonings

To incorporate the filling, bring your cream cheese to room temperature. Mix in the fillings and spices and stir to combine. Refrigerate your mixture for a few hours so the flavors have a chance to meld and the cheese can firm up again. In the meantime, prepare your toppings.

Toppings:
sesame seeds
poppy seeds
caraway seeds
zaatar
minced dried garlic flakes
minced dried onion flakes
parsley
dill
granola
chopped walnuts
chopped pecans
chopped pistachios
slivered almonds
crushed wasabi peas
scallions or chives
smoked paprika

Remove the cream cheese from the fridge after you’ve allowed it to set. Form balls and roll in desired toppings. You can refrigerate again until ready to serve. If you serving these at your yontif meal, I recommend preparing the filling in advance and rolling it in the topping before serving.

Serve with assorted crackers and sliced cucumbers.

SWEET CHEESE BALLS:

While savory cheese balls make a great appetizer, sweet ones serve as a great dessert and also work well when served with cheese latkes and pancakes.

Fillings:
coconut
raisins
crushed pineapple
dried fruit
canned pumpkin
strawberries
maraschino cherries
pomegranate seeds
chocolate chips

Condiment/Spices:
nutmeg
cinnamon
vanilla
coffee
melted chocolate
confectioners sugar
dulce de leche
flavored jams

Toppings:
pretzels
sprinkles
powdered sugar
cinnamon-sugar
shredded coconut
Oreo cookie crumbs
graham crackers crumbs
chopped peanuts
chopped pecans
chopped chocolate
cookies
cocoa
granola
cereal

Prepare as above. Serve with sliced fruit, pancakes, waffles, cheese latkes or blintzes!

As you can see, the ideas are endless! Use your creativity to come up with sweet or savory flavor combinations that you love.

With only one week to go until Pesach, it’s about that time to stop pushing off the inevitable…cooking (or at least planning the menu)! Thankfully, I have not yet made Pesach, and I don’t plan on it, as long as my mother, or in-laws will have me! A lot of people I talk to seem to feel the same, but there are definitely those who are of the opinion that Pesach food is delicious and exciting. Pesach is a yom tov that is so grounded in tradition. The whole idea of the hagaddah is “Vehegadita LeVincha,” passing on the torch to our children. To me, food is so much a part of that. Think about your childhood and so many of your memories will revolve around the smells and tastes of your mothers cooking. If you think back to a certain chag, it’s the traditional family recipes that transport you back to that special time. So for me, Pesach food isn’t about how gourmet it is, or looking for that new recipe. It’s simply about making the foods that my mother made, and those that my children, after me, will continue to make. And for generations, those same delicious smells will continue to waft through our homes, carrying on our traditions for eternity.

One of the recipes that my mother has always made is vegetarian chopped liver. To me, it’s like Pesach on a spoon! Eating it just transports me. She would whip up a few containers on erev yom tov, and we’d eat it alongside the fish at each meal. We could never shmear it on the matza, so we’d eat a spoonful of the liver and promptly follow it with a bite of matza.

Savory Hamantaschen Trio

I am SO excited to post these delicious and festive savory Hamantaschen for Purim! Honestly I was more excited about making these into triangles, then about how they would taste. But once I gave them a try, I couldn’t even pick a favorite – they were all THAT good. I’m not gonna lie, making these Hamantaschen is time-consuming. But in my humble opinion, they are well worth the effort. You can make them for your Purim Seudah or give them out for Shalach Manos. You can probably even make them in advance and freeze them. Go ahead and get creative with the fillings. You can do a deli roll one – just cut up some turkey and pastrami into strips, mix it up with some bbq sauce or honey-mustard. Or try a brocolli, cauliflower or carrot filling. Really, anything goes. If you have more of a bagels ‘n lox kind of meal, you can make very large triangles with the puff pastry, bake them (empty), and fill them with eggsalad, tuna, or any other dips (think serving bowls). Or make individual salad bowls for each place setting. The skies the limit, really! So go ahead, get out your rolling pin, and in the spirit of “Venehapoch Hu”, whisk up a batch of these “not your typical” hamantaschen!

Prepare the dough:

What you’ll need:
1-2 boxes of Pepperidge Farm Puff Pastry Sheets
rolling pin
flour
wide-rimmed cup or round cookie cutter

Leave puff pastry in the fridge overnight to thaw. Remove from fridge. Flour your work surface and rolling pin and roll out the pastry until it is thin. With a cup or cookie cutter, cut out circles in the pastry and lay them out on a cookie sheet. Take your leftover dough and roll it out to the same thickness. Cut more circles, until you have used up all your pastry dough. Refrigerate your circles as they will be difficult to use if they are left out.

For the Cabbage Filling:

What you’ll need:
1 bag coleslaw
1 large spanish onion
1 tsp sugar
salt, to taste
pepper, to taste
oil for sauteing

Slice your onion and saute in oil until golden. Add coleslaw, salt, pepper, and sugar and continue to saute until coleslaw shrinks and softens. Stir occasionally, and add more oil if needed.

For the Spinach-Mushroom Filling:

What you’ll need:
1 bag baby spinach
1 container mushrooms
3 cloves garlic
salt, to taste
pepper, to taste
oil for sauteeing

Saute 3 cloves of garlic in oil, until fragrant, but not browned, about 2 minutes. Clean and slic mushrooms and add to the pan. Saute for 2 more minutes. Add baby spinach, salt and pepper, and continue to saute until spinach is completely wilted.

For the Pumpkin Filling:

What you’ll need:

1 can Libby’s pumpkin (not pie filling)
1/4 cup brown sugar
1/2 tsp cinnamon
1 egg
3 tbsp flour

Mix all ingredients together in a bowl until incorporated.

Assembling the Hamantaschen:

What you’ll need:
prepared puff pastry circles
prepared cabbage filling
prepared spinach filling
prepared pumpkin filling
2 eggs, whisked
cookie sheets

Preheat your oven to 350. Lightly grease your cookie sheets and set aside. Remove your pastry from the fridge and let thaw for a few minutes.  Brush the circles with egg, and fill with a spoonful of filling. Pinch the corners together to form triangles. Brush again with egg. Lay on a cookie sheet.

Bake & Serve!

Bake for approximately 30 minutes, until golden.

Dried Fruit Chutney

Today marks the 15th of the Hebrew month of Shvat, Tu B’shvat, which is the New Year for the trees. Traditionally, this day is celebrated by eating fruit, especially those that are known as the Seven Species (seven types of fruits and grains enumerated in the Bible as being special products of the Land of Israel). They include: Wheat, Barley, Grapes, Figs, Pomegranates, Olives and Dates. The following is a delicious recipe for mustard roasted fruits from The Low GI Diet Cookbook (a diet which I fully endorse, but that’s for another day!). If you add in some dates, and spread it atop some whole grain bread (made from wheat and barley), you’ll have covered 4 of the seven species with just the appetizer!

I absolutely love the sweetness and chewiness of dried fruits. Oven roasting them brings out their flavor, and adds a delicious carmelization that is excellent when paired with smoked meats or cheeses.
