Watermelon & Goat Cheese Salad
arugula
watermelon (or your favorite melon variety)
goat cheese (or feta)
fresh basil (or mint)
fresh squeezed lime juice
honey
chili powder (optional)
Method:
In a small bowl, combine lime juice, honey, fresh herbs (roughly chopped) and chili powder. Spread the arugula, melon and cheese on a plate and drizzle with dressing.
Hi Chanie! I bought tempeh on your recommendation (in the summer) to put into salads. Do you do anything with the tempeh before you put it into salad (like marinate it or drain it by weighing it down)?

You don’t have to drain tempeh, it’s a lot firmer than tofu, but it’s pretty bland if you don’t flavor it. You can marinate it or saute it with some garlic and soy sauce or your favorite spices. It can be baked too.
