Broccoli Parmesan Poppers (Gluten Free!)

Wednesday, May 20th, 2015

We’re gonna keep things short and sweet today since I know you’re all so busy prepping for Shavuot! I’m gonna let the photos do the talking.

I think you’re getting the picture (pun intended). I took some good old broccoli trees and made ’em kid friendly! And they’re even gluten free. Because I love you. (And because I’m on South Beach).

Do yourself a favor and bookmark this flaxseed crumb recipe because if you’re gluten free, you’re going to want to put it on everything. Especially homemade chicken nuggets. Trust me.

Did I mention they are baked too? You’re welcome.

I love how much goodness is packed into these little balls. Broccoli, flaxseeds, almond meal, and I even made a Greek yogurt ranch dip. Betchya never knew that healthy food could taste/look this good!

And you know what else? these little magic balls are easily adaptable too! If you want a more cheesy bite, add some shredded cheddar. Or your favorite cheese. And you can easily swap in some panko or breadcrumbs if you don’t have gluten free ingredients on hand like I do. Told you they were magic balls.

You’ve got the recipe, now get into the kitchen and make them already! Happy dipping!

2-Ingredient Lazy Meatballs

Monday, December 9th, 2013

We all have those days. You know, when you’re up all night with a sick child (or spouse) and you walk around in a daze barely able to cope. Or when you’re just too tired or sick to even think of making supper. Cereal and milk or grilled cheese will do every now and then, but it’s great to have a quick and easy meal that’s also healthy and hearty – to fall back on.

Would you believe it if I told you that you could make meatballs with just 2 ingredients? That’s right – just TWO ingredients! It’s why I call ’em lazy meatballs. But you know what? You’d never know it. I serve these up in front of my kiddies and they are as thankful as ever. You’d think I slaved over them for hours. They’re tasty, moist and perfect over some rice or spaghetti.

Actually, speaking of spaghetti, I’ll tell you something else. I usually prepare a big batch of these babies. The first night, I serve em up over rice. Then, the next night, I take whatever’s left and mash ’em up with a potato masher. The meatballs fall apart into the marinara for a split-second “bolognese”. I spoon the meat sauce right over some spaghetti and I’m the best momma ever.

The secret to these meatballs is NOT to use lean ground beef. The extra fat keeps the meatballs moist, so you don’t need to add anything else to them. The minimal handling of the meat as well as the small size of the meatballs also contribute to their tenderness.

Quesadillas Five Ways

Monday, April 29th, 2013

With Cinco de Mayo coming up, I thought it would be fun to celebrate with 5 different quesadilla recipes. I started making quesadilla’s for dinner whenever my kids are being fussy about the food I’ve made. I always keep a package of mini wraps or tortillas in the freezer, so I have a quick and easy dinner to fall back on, just in case. Once in a while, I’ll make myself one for lunch or a light dinner, adding things like pineapple & jalepeno or broccoli and cheddar. Adding fun and flavorful ingredients to a wrap can help turn a plain tortilla into a quick and easy meal that’s not just for kids!

There are 2 basic ways to prepare a quesadilla. You can either fill half the quesadilla and fold the tortilla over, or place the fillings over the whole tortilla and top it with a second one. I prefer to go the half-way route, and make a few flavors instead of one.

What are some of your favorite quesadilla flavors? Share them in the comments below!
