Loaded Baked Potato Omelette

Written by chanie on June 4th, 2012

Potatoes have got to be my all time favorite food. I’ll eat any type of spud, in just about any preparation. I can’t say the same about eggs though. I don’t especially love omelettes, (I prefer sunny side up) but because these have potatoes in them, I kind of forget about it. You can use any type of potatoes in these, or even some leftover french fries. Top it off with your favorite baked potato toppings like sour cream, salsa, chives or cheddar cheese for the authentic baked potato experience!

Thanks Faygie, that’s a huge complement coming from someone as creative as yourself! I really enjoy seeing what you knit and your great scrapbooking ideas. I’ve done some scrapbooking too and I really enjoy it!

  2. This is definitely my kind of omelet! I also love potatoes in any form and am not normally into lots of eggs. But this looks great, especially with the baked potato toppings.

    Great idea!

I like omelets, but never end up making them, this looks nice and easy and my kids would love it. I wouldn’t use leftover french fries though, don’t think that would taste as good.

  4. Looks so delicious and simple. Kinda like eating your eggs and hash browns, but all in one yummy bite!

I also love potatoes! This is such a great way to incorporate them into a breakfast dish, that isn’t traditional home fries etc! Looking forward to trying it out!
