Loaded Baked Potato Omelette

Potatoes have got to be my all time favorite food. I’ll eat any type of spud, in just about any preparation. I can’t say the same about eggs though. I don’t especially love omelettes, (I prefer sunny side up) but because these have potatoes in them, I kind of forget about it. You can use any type of potatoes in these, or even some leftover french fries. Top it off with your favorite baked potato toppings like sour cream, salsa, chives or cheddar cheese for the authentic baked potato experience!

  1. I like omelets, but never end up making them, this looks nice and easy and my kids would love it. I wouldn’t use leftover french fries though, don’t think that would taste as good.

  2. this reminds me of a fritata. Totally agree with Melinda it’s like a one pan complete breakfast. I love! eggs and potatoes love me so I love this idea bring it on!

  3. I also love potatoes! This is such a great way to incorporate them into a breakfast dish, that isn’t traditional home fries etc! Looking forward to trying it out!
