Cheesy Minestrone
1 medium onion, diced
2 tbsp olive oil
2 cloves garlic, minced
2 heaping tbsp tomato paste
1 can cannellini beans, drained and rinsed (optional)
1 14.5oz. can diced tomatoes
1/2 tsp basil
1/2 tsp oregano
4-6 cups vegetable stock
salt and pepper, to taste
1 large zucchini, spiralized or julienned
1 bag shredded mozarella
optional additions: alphabet pasta, baby spinach
Method:
Saute onion and garlic in olive oil until translucent. Add tomato paste and continue to saute until fragrant. Add beans, tomatoes, basil, oregano, stock and salt and pepper. Stir to combine the ingredients and bring the soup to a boil. Simmer for 20 minutes. Taste and adjust seasonings, if necessary. Add the zoodles and spinach to the pot, cover and simmer until just tender, about 5-10 minutes.
Place a handful of shredded cheese at the bottom of each bowl and pour hot soup over it. Add pasta, if desired.
